Spicy Beef and Rice Salad Salads

- 1 lb. boneless beef top sirloin steak, cut 1 inch thick
- 2 tsp. Spicy Seasoning Mix, divided
- 2 cups spicy cooked rice
- 1 medium red apple, cut into pieces
- 2-3 green onions, thinly sliced
- 1/4 cup coarsely chopped walnuts, toasted
- leaf lettuce, optional
Cook 2/3 cup rice according to package directions; add 1 tsp. Spicy Seasoning Mix to water before cooking. Keep warm.
Heat large nonstick skillet over medium heat 5 minutes. Meanwhile rub 1 tsp. Spicy Seasoning Mix into both sides of steak.
Place steak in skillet and cook 12 to 14 minutes for rare to medium doneness, turning once. Season with salt, if desired.
Meanwhile combine prepared rice, apple, onions and walnuts. Carve steak into thin slices; arrange over rice mixture. Garnish with leaf lettuce and apple slices, if desired.
